Preparation • Shell and devein prawns, left the tails on.

• Sift flours together in a medium bowl.

• Add egg and water and mix until just combined, adjust seasoning and allow batter to stand for a few minutes.

Holding prawns by the tails, dip in the batter and allow excess to drain away.

• Deep fry prawns in preheated oil until batter is very lightly browned. Don’t overcrowd the pan.

• Garnish and serve hot with any dip.
