CHICKEN CHILI Here’s how to make about six servings of chicken chili. ______1.

Get about one pound of cooked, skinless, boneless chicken breasts, a clean cutting board, a clean fork, a clean, sharp knife to cut up the chicken, a clean pot (this should be a big pot), two chicken bouillon cubes, three 15 ounce cans Great Northern or Cannellini beans, a clean can opener, if needed, a clean spoon to scoop out the beans from the cans, one 4.5 ounce can chopped green chilis, water from the faucet, a clean liquid measuring cup, cumin, a clean set of measuring spoons, dried oregano, cayenne pepper, garlic powder, a clean long handled spoon and a clean ladle.

Put chicken on to cutting board. Using your hand and the fork, put the chicken breasts, one at a time, on to the cutting board.

Careful! Cut chicken into small pieces. Using your one hand and the fork, hold the chicken breast so that it is steady and secure on the cutting board. Using your other hand and the knife, cut the chicken breast into bite sized pieces.

Put chicken into pot. Using your one hand, hold the cutting board, with the chicken pieces, over the pot. Using your other hand and the fork, scrape the chicken off of the cutting board into the pot.

Take off wrappers from bouillon cubes. Put bouillon cubes into pot. Using your hands, take the wrappers off of the bouillon cubes. Put the bouillon cubes into the pot.

Careful! Open cans of beans. Lids stay on. Using the can opener or the pop top lids, open the cans of beans, but don’t take off the lids completely.

Careful! Drain liquid from bean cans. Lids off. Using one hand or both hands, hold each can of beans, one at a time, and press down on the lid. Turn the can of beans upside down over the sink so the liquid drains from the can. Be careful to hold the lid in place so the beans do not fall out of the can. Turn the can around so that it is no longer upside down. Take off the lids and throw them away.

Careful! Put beans into pot. Using your one hand, hold each can, one at a time, around the middle and tilt it down and over the pot. Using your other hand and the spoon, spoon out the beans from the can and into the pot. Throw away the can.

Careful! Open can of green chilis. Using the can opener or the pop top lid, open the can of green chilis. Take off the lid and throw it away.

______10. Put chilis into pot. Using your one hand, hold the can around the middle and tilt it down and over the pot. Using your other hand and the spoon, spoon out the chilis from the can and into the pot. Throw away the can. ______11. Measure 1 1/2 cups water. Using the liquid measuring cup, measure one and one half cups of water from the faucet. ______12. Put water into pot. Put the water from the measuring cup into the pot. ______13. Measure 1 teaspoon cumin. Using the measuring spoons, measure one teaspoon of cumin.

______14. Put cumin into pot. Put the cumin from the measuring spoon into the pot. ______15. Measure 1 teaspoon oregano. Using the measuring spoons, measure one teaspoon of oregano. ______16. Put oregano into pot. Put the oregano from the measuring spoon into the pot. ______17. Measure 1/4 teaspoon cayenne pepper. Using the measuring spoons, measure one fourth teaspoon of cayenne pepper. ______18. Put cayenne pepper into pot. Put the cayenne pepper from the measuring spoon into the pot. ______19. Measure 1/4 teaspoon garlic powder. Using the measuring spoons, measure one fourth teaspoon of garlic. powder. ______20. Put garlic powder into pot. Put the garlic powder from the measuring spoon into the pot. ______21. Careful! Mix. Using your one hand, hold the pot so that it’s steady. Using your other hand and the long handled spoon, carefully mix together all the ingredients until well blended. Try to mix slowly and carefully to keep all of the ingredients in the pot. ______22. Put pot on to stove. Put the pot on to a stove burner. ______23. Turn on stove to medium. Turn on the stove burner to a medium heat. ______24. Turn stove to low when chili simmers. Turn the stove burner to a low heat once the chili starts to simmer.

______25. Careful! Stir occasionally. Simmer for about 40 minutes. Using your one hand, hold the pot so that it’s steady and safe. Using your other hand and the long handled spoon, stir the chili every fifteen minutes or so while it is cooking. Cook the chili, at a simmer, for about forty minutes. ______26. Turn off stove. Turn off the stove burner.
