LOUDY WIGGINS: Poached Eggs

Poached eggs are a fantastic way to start of your day  Eggs provide a great source of protein  Avocado provides healthy fats, which are important for the body  A great way to include some veggies at breakfast time.  Source of iron PREP TIME: 5 minutes COOK TIME: 10 minutes SERVES: 2 INGREDIENTS:  4 eggs  1 avocado  2 tomatoes  2 cups mushroom sliced  Bread for toast

METHOD: 1. Bring a saucepan of water to boil, and then reduce heat to medium so that it is simmering. Add a pinch or two of salt. 2. Crack the eggs into a cup. 3. Swirl the water, to make a gentle whirlpool. 4. Slowly pour the egg into the water. 5. Leave to cook in the water for ~3-5 minutes, depending on how you like your eggs cooked. 6. Meanwhile, cook mushrooms in a pan and slowly roast tomatoes on the side 7. Serve eggs with cooked mushroom and tomato, sliced avocado and toast
