Roasted Brussel Sprouts with Almond Slivers Serves 3-4

Ingredients     

1 lb Brussel sprouts, sliced lengthwise in half 3 Tbsp. extra-virgin olive oil or coconut oil ¼ tsp. sea salt 2 Tbsp. fresh lemon juice 2 Tbsp. slivered almonds, toasted (optional

Directions 1. Preheat oven to 400 degrees; cover a baking sheet with parchment paper, set aside. 2. Add olive oil to a large skillet over medium-high heat. Place Brussel sprouts in pan, cut-side down, sauté until lightly browned. 3. Remove Brussels sprouts from skillet, spread on baking sheet. 4. Sprinkle with salt and place in oven to roast for 12-15 minutes. 5. Remove from oven, add to a serving bowl. Toss with fresh lemon juice and slivered almonds. Serve hot.

Tips  To toast slivered onions, place almonds in a dry skillet over medium heat. Turn almonds frequently until lightly browned. Remove from heat and cool.  Double or triple recipe quantities for larger serving size.  For an added kick, sprinkle Brussel sprouts with cayenne pepper in step #3 before roasting.
