450g lean minced beef 4 sprigs fresh thyme Fresh rosemary Rock salt and black pepper

Method n Preheat the oven to 170°C/fan 150°C/gas 4. n Boil the sweet potatoes in a pan until soft or just tender. Drain and reserve the cooking water. Mash the potatoes with 2 tablespoons of olive oil, or coconut oil. Add a little of the cooking stock from the pan if needed. Season with salt and pepper. n Heat some oil in a pan and sauté the onions until soft. n Add the minced meat and cook for another 5 minutes. Add the diced carrots and cook again for 5 minutes. n Pour in about 120ml of the stock from the potatoes, add the thyme, and simmer for about 5 minutes. n Spread the cooked meat in a dish and cover with the mashed sweet potato. n Drizzle some more olive oil over the top, season with salt and pepper and bake in the oven for 30 minutes. n Remove from the oven and garnish with the rosemary.
