Suggested Preparation Instructions (In recommended order) 1.
Remove chicken from packaging and pat dry. Lightly season with salt and pepper.
2. Place a large skillet over medium heat, add about 2 tablespoons of olive oil to cover the bottom of the skillet. Once oil is hot, add chicken breasts. Cook 5-7 minutes per side until lightly golden on both sides and cooked through. 3. While chicken is cooking, dice up tomato and avocado. Cut lime into four wedges. Chop cilantro leaves. Set all aside for toppings. 4. Remove chicken from skillet and place on cutting board, allow to cool slightly. 5. Add 1 tablespoon of olive oil to pan. Once oil is hot add minced garlic to pan and stir for one minute, just to soften the garlic. Then add the cauliflower rice to pan and stir approximately 2 minutes as cauliflower heats through. Add Mrs. Dash and salsa. Continue to stir another 3 minutes until mixture is hot. Turn heat down to low. 6. Cut chicken into bite-sized pieces and stir into cauliflower mixture.
SERVING SUGGESTION Serve topped with tomato, avocado, cilantro and a squeeze of lime juice.
