Suggested Preparation Instructions (In recommended order) 1: Pasta STOVE TOP Place a large pot with 4 quarts of water over high heat; add 1 tablespoon of salt for best cooked pasta results. Allow water to come to a full rolling boil while continuing with the preparation instructions. Wash and dry zucchini and cut in half length-wise, then cut into ½ –inch slices. Cut mushrooms and cherry tomatoes in half. Pluck 4-5 large basil leaves from the stems. Stack the leaves together and roll them from the long edge into a tight tube. Starting at the end of the leaf tube cut thin slices to create ribbons of basil. Add 4 tablespoons of olive oil (4 packets) to a large skillet pan and place over medium-high heat. Once oil is heated and evenly distributed over the bottom of the pan add the zucchini and mushrooms, stir and cook covered for 10 minutes, stirring once halfway through. Stir in onions and peppers and cover for another 5 minutes. Add pasta to boiling water. Set timer for 11 minutes. Stir the vegetables again and cook for another five minutes. Turn heat to low. Then add the tomatoes, garlic and basil; stir well and cook an additional 5 minutes. Cooking times for the vegetables may vary; feel free to adjust the cooking time to desired tenderness. When timer goes off and the pasta is done cooking, immediately drain off all the water. Add the drained pasta and the parmesan cheese to the vegetables in the skillet and stir well. Remove from heat and serve.
2: Breadsticks OVEN Preheat oven to 375 degrees. Arrange breadsticks evenly on a sheet pan, or directly on to oven rack and bake for 3-5 minutes.
3: Salad Place lettuce in a large bowl. Add dressing and mix well. Top with cheese and croutons just before serving.
